Banana Chocolate Chip Loaf
This recipe originally came from a Fall 1997 Save-On-Foods Appeal Magazine.
- 1 egg, beaten
- 2 tablespoons vegetable oil
- 1/2 cup 2% milk
- 1 cup mashed banana
- 1 teaspoon vanilla
- 2 cups all-purpose flour
- 1-1/3 cups granulated sugar
- 1/2 teaspoon salt
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 3/4 cup semi-sweet chocolate chips
Preheat oven to 350oF.
Prepare bowl No. 1: Mix egg, oil, milk, mashed banana (mashed with a fork on a plate) and vanilla. Prepare bowl No. 2: Mix all remaining ingredients. Add bowl No.1 to bowl No. 2 and mix gently to combine ingredients. Transfer batter into three mini-loaf pans. Bake 60-65 minutes or until a toothpick inserted in the centre comes out clean. Let cool in pans 10-15 minutes. Turn out onto rack to cool completely before wrapping.
